Straight Pans

Pans with a flat side (vertical or slightly inclined) are particularly suitable for caramelizing, frying or roasting. With a wide bottom, such a pan will enable faster heat transfer over a larger surface. There are aluminum pans (suitable for quickly preparing side dishes and dishes with butter), stainless steel pans (suitable for frying) and steel pans (suitable for baking ingredients with less moist).
