The Napoletana line of pizza peels and turners was designed to meet the needs of pizza bakers who prepare pizza in the Neapolitan style in a traditional Neapolitan wood-fired oven, where temperatures can reach over 500 degrees and a large number of pizzas are baked in a short period of time.
The loading surface of the peel is designed in accordance with the method of loading pizza dough onto the peel (the dough is placed in the middle and stretched more intensively towards the extreme points of the peel), and the perforation of the peel functionally follows this method of loading: the design, circular shape and the number and placement of holes allow for ideal removal of flour from under the dough, given the special method of loading it, according to the Neapolitan tradition.
